Study note

Riboflavin: coenzymes, synthesis and dietary sources

THE CONTEXT
Riboflavin has a central role in energy-yielding metabolism through its contribution to flavin coenzymes.

Coenzyme formation

•
Riboflavin provides the reactive moieties of flavin mononucleotide (FMN) and flavin adenine dinucleotide (FAD).
•
ATP-dependent phosphorylation of riboflavin produces FMN.
•
A further reaction with ATP produces FAD by transferring the AMP moiety onto FMN.

Dietary sources and food use

•
Milk and dairy products are the main dietary sources of riboflavin.
•
Riboflavin is widely used as a food additive because of its intense yellow color.
